Gajar matar ( carrots and peas) sabzi is a very tasty combination. It's a very common vegitable in Pakistan as well as in India in winters times.
Although i don't like peas so much but with gajar matar ki sabzi i make sure to put more Matar than gajar. There are various ways to prepare this combination of vegetables and as a variation sometime i also like to add potatoes and coliflawer. So let's get started....
INGREDIENTS:-
1kg Carrots
3 cups frozen peas
1 medium sized onion
1 tbsp pressed grated ginger
1/2 tsp crushed cumin seeds
1/2 tsp crushed coriander seeds
1/3 cup water
1/2 cup vegetable oil
Fresh coriander leaves
METHOD:-
Peel and cut the carrots into medium round slices. Set aside!
Cut onion into thin or medium slices. Put saucepan or handi on stove over medium high flame. Add vegetable oil and sliced onion.
Let them cook, until they are transparent.
Add salt, red chilli powder, red chilli flakes and turmeric according to you taste. Stir and let the dry spices cook for a while.
Now add 1/2 glass of water and cook the masla until all the water evaporate continue cook this masla for 1 or 2 minutes more.
Now our masla is done. Add grated ginger and cook 1 or 2 seconds. I don't like to over cook my ginger because in the end it will give a nice gingery falvour to our sabzi. Yes! Tha's the way how i cook it. Ssssssshhhhh! It's a secret trick that my mum does a lot.
Add carrots and peas. I am using frozen peas. You can use fresh one. But if you're lazy like me and don't like to peel the peas off so frozen peas are the best option.Mix well 1 or 2 times, cover and let the veggies cook. But every 1 minute later,uncover the saucepan and mix carrots and pease so they don't get burnt.
Keep the flame on high medium. This will help the water to evaporate fast and our veggies don't get soggy.
As you can see, carrots and peas has released enough water but don't worry this will help our veggies to cook well without adding extra water.
Keep cooking and stirring the veggies. Until peas changed in colour to light green and carrots are cooked.
Now keep the flame very very low and sprinkle freshly crushed cumin and coriander seeds and some fresh choped coriander. Let them cook another 5 to 6 minutes more. So all the flavour
